A clear winner: Mutabal
A dip prepared with eggplant, tahini, yoghurt, garlic, lemon juice and olive oil. It has a nice smoky taste, and feels lighter than hummus. Our favourite! Really addictive with hot bread fresh out of the oven. You can find the recipe here.
Again, a clear winner: Maqluba
A tatin with vegetables (cauliflower, eggplant, peppers, potatoes), chicken, rice and spices. A very tasty and delicate dish with a twist. We loved it so much that we ate it for dinner and breakfast three days in a row! The preparation and presentation are also a real show, that adds a lot of fun to the experience.
Baklava of course
Theses pastries are common to most of the ex-Byzantin and ex-Ottoman empire countries, and are always delicious. The come in many sizes and shapes, but always pack nuts, pistachios and syrup for our pleasure! Shops always have hundreds of them piled on gigantic plates, to always please your eyes from the street. Just looking at them is already part of the experience. There is a Jordan special, Kanafeh, a kind of baklava with local cheese, that has a unique taste. A must try, but not our favourite, sorry!
